Situated in the Franschhoek valley where vineyards have been planted since the late 1600s, when exiled French Huguenots brought their viticultural know-how to their new home in South Africa.
Only the best grapes were picked at 25.5°B and fermented in small open-top fermenters. Punched down by hand 6 times daily until fermented dry. Grapes were gravity fed to press. After pressing, the wine underwent natural malolactic fermentation in barrel. Wine was matured for 24 months in a selection of new premium French oak barrels
Rich layers of spices with hints of black fruits and liquorice. Pairs best with well matured rump or sirloin. Best to mature for further complexity. Drink within 7 – 12 years from vintage.
